Vegetable oils have incredibly low smoke points and (apart from olive, coconut, and olive oil) are incredible high in omega-6 fatty acids which, when consumed in excess, create an inflammatory response in most people. When studies come out about fat being the Devil, they are talking about shitty, refined, and chemically modified vegetable oils.
Animal fats actually have bioavailable nutrients, are perfect for cooking/baking at high heat, and they make everything taste AMAZE-BALLZ.
Ingredients:
4-5 yellow potatoes
2 tablespoons melted pork fat (I use Epic brand animal fats)
1 tablespoon sea salt
1 teaspoon garlic powder
*Add more spices if you want. Have fun wit' it.
Directions:
Preheat your oven to 450 degrees
Cut potatoes into long wedges
In a bowl, toss the wedges with the pork fat and spices
Place wedges flat on a baking sheet
Bake at 450 for 30 minutes or until wedges get crispy and brown and become fries
Let cool and then shove them in your face like carbs are your best friend in the whole wide world
