Paleo Lemon Tarts

It's lemon, it's in a tart, it's cute as hell.... what's not to love.


Tart Crust Ingredients:

1.5 cups almond flour

1/4 cup melted ghee

2 tablespoons pure maple syrup

1 tablespoon lemon juice


Lemon Custard Filling:

2 egg yolks

1/2 cup lemon juice

2 tablespoons ghee

1 cup water

3/4 cup monk fruit sweetener (or maple syrup or honey)

1 tablespoon tapioca flour


Tart Crust Directions:

Preheat oven to 350

Combine all ingredients to create your tart dough

Use your fingers to form the tart in your crust mold (I used a mini cupcake dish)

Bake tart crusts for 10 minutes while you prep your lemon filling


Lemon Filling Directions:

Add all the things to a pot on low-medium heat and stir until everything is evenly mixed.

Cook for about 5 minutes while you stir and let the mixture thicken.

Turn the heat off and carefully fill your tarts with the lemon fillings.

Bake for another 10 minutes.
